Toddler Meals :: BBQ Chicken Pita Pizza

I've been sharing what my 15 month old, Parker, eats via Twitter (#toddlermeals) so I am thrilled to join Brittany in her link up!

Quick and convenient foods are the theme this week, and honestly, something I rely on quite often. For dinner Wednesday, I made Parker a BBQ Chicken Pita pizza, and it was super easy. I started with leftover grilled chicken from the night before - often I just chop it up and give it to Parker warmed up, but sometimes he seems to be a bit bored with that. So this time, I took a 6" pita from Trader Joe's, smeared it with a bit of olive oil, slathered it with bottled BBQ sauce, topped it with mozzarella and diced chicken. I put it under the broiler for 3-4 minutes and voila! It looked and smelled delicious - I wanted it for myself!

I paired it with frozen veggies from Trader Joe's (carrots, peas, corn and cauliflower). Frozen veggies, especially the steam in a bag kind, are staples in our house. Not only are they super convenient, but from what I've read can often be more nutrient-dense than those that travel cross-country because of how they're flash frozen. For this meal, Parker had Vegetable Melange:

The verdict? He LOVED it - he ate it all. I'll be making this for Parker (and myself!) again soon.

Toddler Meals / Lunch edition.

I've been sharing what Parker eats for a few months now on Instagram and Twitter, hashtag #toddlermeals. So I was excited to join the Munchkin Meals link up to see what other babes are eating.

While I prepare most of Parker’s meals at home, we do eat lunch out once or twice a week when I’m running errands. Now that Parker is 1 (14.5 months) and can eat pretty much whatever I eat, there are many options out there, but they’re not always healthy or nutritious.

Here are the best lunch options we’ve found:

Chipotle: Chipotle is one of the better fast food options out there for adults, so it’s no surprise that kids eat better, too. Parker demolishes food from Chipotle – and it’s probably the most wallet-friendly option! You can get a taco or taco-sized quesadilla, choice of two sides (I get black beans and brown rice), chips (which I eat!), and milk or juice. All for $3.75! Parker obviously drinks whole milk and we haven’t offered him juice yet (we plan to wait a loooong while unless he gets constipated – which hasn’t been a problem so far) - so that gets saved for mama, too. I always bring his whole milk and water for him to drink with each meal.

One note: If I go someplace like Chipotle or Moe’s that offers black beans, pinto beans, veggies, or guacamole as a topping, often I will just ask for them on the side and then just give them to Parker ;)

Panera Bread:  The kids menu is pretty limited , after all, it is just a sandwich place. I usually get Parker a turkey and cheese sandwich (comes on white wheat bread). I often ask for gouda or cheddar in place of the American cheese that comes on it. It comes with a Horizon organic “go gurt” – which Parker drinks with a straw ;) I’ll usually supplement this meal with something from home – a pouch or chopped pickle, or some fruit. He also gets a few pieces of my baguette dipped in some of my fantastically-delicious broccoli cheese soup.

Chick Fil A: Chick Fil A is another wonderfully kid-friendly place. They offer table toppers with their high chairs! I get Parker a 4-piece grilled nuggets (not breaded) with a cup of fruit. The fruit is not the typical melon-heavy cop out that you sometimes get :) The fruit cup usually has strawberries, pineapple, green apples, and grapes.

Finally, another tip. Parker and I met my parents at Applebee’s once when I was visiting my hometown, and none of the kids menu options looked healthy or good to me. So I ordered Parker a Spinach & Artichoke flatbread from the appetizer menu! It was about $7, which was more expensive than most kids menus, but it was (a bit) healthier. I recommend checking the appetizer section and/or sharing part of huge restaurant meals with your toddler. It beats the chicken nuggets – grilled cheese – hot dog options any day!

Toddler Meals

I’m really enjoying Munchkin Meals. It’s inspired me to be a little more creative in the kitchen. On that note, I am excited about the focus on breakfast this week, because I feel like we’re in a rut for that particular meal.

Most mornings, Parker has an organic waffle (Nature’s Path, Kashi) with a touch of butter or syrup or pancakes (Trader Joe's Homestyle Pancakes or Van’s organic), with fruit – berries, pears, peaches, bananas, etc. So to mix things up a bit this week, I made Parker (and mama & daddy!) some banana blueberry muffins! They were a hit – moist and full of banana goodness! I gave him one muffin with some fruit and a YoBaby yogurt. It’s safe to say I’ll be making these again. A couple notes about the recipe: I only had two ripe bananas, so per one of the suggestions I substituted ¼ cup (unsweetened) applesauce. I also had enough batter to make 16 muffins (not 12) and they we’re perfectly done in my oven in 16 minutes. I look forward to seeing what everyone cooks up this week! I've been logging what Parker eats on Instagram and Twitter, hashtag #toddlermeals

Tips & Tricks Tuesday / Vinegar!

Hi everyone! I'm temporarily blogging in my old space until I set up a new blog in a few weeks. Pardon the dust!

I’m excited about Meagan’s link up, because I’m always looking for nuggets to put to good use. I am obsessed with things like “5 New Uses for safety pins” in Real Simple or any creative Pinterest recipe.

Today, I wanted to share my love affair with…vinegar! Yes, vinegar. It’s revolutionized the way I clean my home. I have a gut feeling that most of us don’t clean the way our moms used to. I do it as little as possible and only when company’s coming – amiright?

When I got pregnant with my now-14 month old, I started researching “green” cleaners. Like all first-time moms, I was paranoid about bringing unnecessary, harmful chemicals into our house. However, most of the “safe” ones are rather expensive, and I found that I needed one formula for my bathroom tile, one for my tub, a different one for my kitchen counters, etc.

That’s why I was happy to discover that plain old white VINEGAR is a wonderful all-purpose cleaner that I can use in all rooms, all surfaces. AND it’s much safer than even the green cleaners out there. I bought a gallon of vinegar at Target for a measly $2.39 and a nice 32 oz. Rubbermaid spray bottle at our local hardware store. I filled the bottle with 75% vinegar, 25% water. I use it all day, every day – it’s especially good for quickly cleaning my son’s high chair after each meal. A few spritzes, a cloth, and I’m done.

Here are other great uses for vinegar:
  • Set out a small glass bowl of vinegar in a room that needs deodorizing. It will pull the nasty smells right out of the air. I do this in my son’s bathroom where we keep the Diaper Champ (i.e. diaper genie)
  • Use as a rinse aid in your dishwasher! It will help clean the gunk off your dishes in lieu of Electrosol tabs
  • Kills and repels ants that find their way into your house in the summer
  • Perfect for killing bacteria on kitchen cutting boards (especially butcher block)
  • Clean your kids toys and anything they chew on
  • Combine with baking soda to clean faucets and other fixtures
I know there are many more uses for vinegar (just google it!) but these are the ways I've used it!

What are your favorite cleaning products?

Toddler Meals

Hope everyone had a wonderful Independence Day! We hosted my parents (and later, my in-laws) for a cookout - hamburgers and hot dogs. And every single piece was eaten - nothing leftover for the baby! It's okay - he had plenty.

I didn't mention this last week, but I'm still breastfeeding Parker twice a day - when he wakes up and when he goes to sleep. So around 7:30 or so he nurses, then has breakfast around 9:00.

Breakfast

Parker (14 months as of yesterday!) had plums, blackberries and pancakes (with a bit of butter/cinnamon). Milk and water to follow.

Fruit + pancakes or whole grain waffle (yogurt, too) is a pretty typical for him. I'm looking for ideas to mix it up a little.

Lunch
Parker had a bit of a different lunch - usually he gets something like this for dinner. I made him Pasta Primavera, basically: Whole wheat pasta, marinara sauce, and vegetables.

I do make sure he gets complex carbs throughout the day because he is only 40th percentile for weight and he's walking EVERYWHERE now. However, it's not typical for him to have pasta twice in a day - mama was a little harried today. He normally has eggs or a "sandwich" of sorts.

Dinner

I actually hauled out the "nice" camera for dinner! I wanted to make use of a big eggplant I bought, and one of the girls in my online mom's group suggested baking eggplant "fries". I used this recipe - they were quick to make & turned out great. Parker loved them! There aren't many in the picture because he ate all of them first! He is getting pickier about new foods, so that's saying something. Marinara sauce (with leftover pasta) was the perfect accompaniment. He also had most of a peach for dessert.

I added some gratuitous pictures of my baby because he's just so beautiful ;)

As I mentioned last week, I've been sharing what Parker eats through Twitter and Instagram - hashtag #toddlermeals - so feel free to follow!

Toddler Meals

Hi! I'm Emily. Please ignore the dust on this blog, it was started during our engagement to share all of our (and by our, I mean MY) planning and ideas, and eventually, our honeymoon to Australia. It hasn't been visited in about six years.

I think I'm going to start blogging again on a new platform. This time, writing about parenting and our life with a busy almost-14 month old. A ground-breaking topic, I realize. ;) I'm using Brittany's Munchkin Meals link-up to test the waters - after all, I've been sharing what Parker eats for a few months now on Instagram and Twitter, hashtag #toddlermeals. Without further ado - here's what Parker is eating these days.

Breakfast

Blueberries, cherries, and an organic flax waffle (Nature's Path) with a bit of butter.

Parker loves fruit, and can put away a ton of it. He usually has cheerios or puffs while I'm preparing his food. Breakfast is the most successful meal of the day for him - he always eats a very good one. (As he gets older, lunch and dinner have ebbs and flows on the amount he'll eat). After he's done, he drinks 2-3 oz of cow's milk - and will continue to drink it until nap time. Water, too.

Lunch

Omelet with cheddar cheese and red peppers, carrots, asparagus. Roll with butter and watermelon (not pictured) for dessert.

Eggs are probably tied with blueberries for Parker's favorite food. He typically eats them for lunch or dinner, not breakfast, 3x a week. I usually make an omelet in a coffee cup (1 egg, 1 TBL milk, cheese + veg - microwave for 1:00).

Omelets are a great way for me to sneak in a veggie like spinach or broccoli, since he has started to turn up his nose a bit at veggies here and there (breaks my heart; he has always been a fantastic eater. Welcome to the toddler years). In an omelet, he wolfs down the veggies. Cow's milk and water with this meal, too.

Snack

Only recently did Parker start having snacks, and even now it's not every day. Until he was one, he was still nursing 4x a day between meals, so I didn't think it was necessary. He never seemed to be hungry between meals. Now, depending on the size of the lunch he ate, he'll have some string cheese or applesauce and the like around 3pm or so. Today, he had a handful of Annie's graham cracker bunnies (with cow's milk).

Dinner

Parker had turkey taco meat leftover from mama and daddy's dinner last night, peas, and half a cheese quesadilla. He loves quesadillas, so I always introduce that after he's taken several bites of his protein and veggies. Parker was just so-so on tonight's meal - typical of him in his early toddler months - and so to make sure he got enough food, I gave him some grapes. Of course, he demolished those.

So that's it! I hope to share more #toddlermeals in the future via a new blog. You can always follow me on Instagram or Twitter until then.

Our Wedding Weekend

Details from the wedding are long overdue. I am sorry about that! I wanted to wait until we got pictures to go with it...and we just got our proof books (900 images!) on Tuesday, and our online site went live yesterday. (they are pixelated on my blog, but in perfect resolution on the live site).

Strange as it may be, I was most worried during the rehearsal! Let me mention that the first wedding that I have ever been in was my own, and completely new to me. The whole time I felt like I had one day of rehearsal, one day to memorize my "lines" and know my. Never been a bridesmaid. So this was all steps, for the big opening night. Ha! I was worried I was driving my pastor crazy, but he assured me that I really didn't have to remember anything, and he would nudge me if necessary ;) We went through the ceremony twice. Our musicians were there as well, and I was super pumped because the pieces just came together beautifully. When Chelsea, our violinist, began playing our Pavane piece, tears just sprang to my eyes, because it is such a moving, emotional, layered song. Love it. The rehearsal dinner was quite lovely, too. We had appetizers and drinks on the veranda, followed by a beautiful toast from a family friend. For dinner, everyone was mixed up at different tables, and it was such a treat to see everyone who makes up a piece of who we are, getting to know one another.

After the dinner, we had a party for family and friends. It was held at a coffee shop in my hometown, and it is by far the coolest, most eclectic and interesting place in our little conservative town :) It is owned andoperated by a friend of mine from high school, an artist extraordinaire and now restauranteur. People asked me "This place is so cool. Was this your hangout in high school?" To which I replied "I wish. It took a product of my high school to create something this cool." The party was so much fun. Our friends and family who came in Friday night were able to mix and mingle...the party had such an easy flow from room to room to the courtyard. Lots of storytelling amongst family members, lots of introductions, lots of laughs. A perfect night!
Saturday morning was the bridal brunch. We had delicious breakfast casserole, fruit and muffins, and I gave all of the bridemaids their gifts. A necklace to wear with their dresses, and a cool oversized mug from Anthropologie. It was a lot of fun to hang out with the bridesmaids and family before we all went our separate ways to get ready for "the big day!" Mom, my sister and I were off for modified mani-pedis at 1pm! My nails were primed with a beautiful milky white I'd bought especially for the day, OPI Mimosas for the Mr. and Mrs. I absolutely adore that color, and it looked fantastic in photos. While at the salon, we learned that the caterers hadn't thought to begin chilling any of the champagne or wine or cokes waiting at the country club. Many panicked calls later, my sister's boyfriend saved the day by executing that task :)

My hairstylist, Carrie, arrived around 3pm. She cut and styled my hair in Charlotte on a regular basis, and I was so thrilled she'd be doing my hair for the big day-- traveling an hour and a half, to boot. She is such a rock star, and can truly make something outta nothing-- case in point, my fine, thin, flat, soft hair. She has always listened to me whine and complain about my hair with a sympathetic ear, offering real solutions. And, she has a completely calming disposition. Love that girl. Anyway, she got to work on my hair, and a mere 45 minutes later had achieved the blunt, modern bob of my wedding dreams.

My sister called. She and Jay had both been by the country club to check out the drinks situation, and insisted that I go by there on my way to get my makeup done. All the decorations were in place, the tables perfection, the centerpieces fantastic. They said I needed to go soak in the fruits of my creative labor because the reception would be such a blur. I am so glad I did this. It gave me such a peace to check out what was to come. I was simply giddy with excitement; everything looked beautiful! The favors were out. The cake-- the cake was there! It was white on white, piped with vows, phrases about love, messages and love note thoughts, all selected by me. It was the perfect cake, since, well, I am a writer. Jay liked it a lot too, especially because it tasted good :)

It was such a treat to take everything in.

Meanwhile, the guys were all getting ready at the hotel, and set to arrive at the church around 6:15pm.

Next, I had my makeup appointment at 5pm. My mom was there, having her makeup done as well.

The transformation to bride was nearly complete! All of the bridesmaids were set to gather at the church at 6pm! That hour between 6 and 7 felt like it took forever...but in a good way! It was so fun to be in a room of bubbly excitement! We tied the bridesmaids sashes, got my into my dress and took a couple of tries at my veil. The first time it was too low on my head, so we took it out and placed it closer to the crown. Perfect. I cannot tell you how much I love my veil. Sheer perfection, no pun intended. It was such a clean silhouette. Loved it.

The ceremony was just beautiful. I'll let the photos tell the story. Everything went off without a hitch. Walking down the aisle with my dad to Rondeau. Seeing Jay grinning. Remembering everything. Helping me up the stairs. Our family friend, who was like a second mom to me, sang "Shine on Us" by Michael W. Smith. My sister did a reading from one of our favorite books/movies growing up, Anne of Avonlea-- a passage so true of Jay's and my journey. We were friends first: Perhaps, after all, romance did not come into one's life with pomp and blare, like a knight riding down; perhaps it crept to one's side like an old friend through quiet ways; perhaps it revealed itself in seeming prose, until some sudden shaft of illumination flung athwart its pages betrayed the rhythm and the music, perhaps. . . perhaps. . .love unfolded naturally out of a beautiful friendship, as a golden-hearted rose slipping from its green sheath.

The vows, well, that's where it got more emotional. When Jay started "repeating after", he wasn't looking at me, he was looking at the pastor. So I squeezed his hand gently and whispered "look at me". And bless his heart, that's when his tears began to fall. Love that man.

All in all, the ceremony, from the seating of the mothers to the presentation of husband and wife, took a crisp 16 minutes! Sixteen minutes, people! I was shocked by this, I thought it would be about 25 minutes. I told Jay later, I hope people didn't feel gipped! :) He and I both wanted a to-the-point ceremony, but we underestimated the time a bit, I guess!

Sooooo happy to be husband and wife! :) :) :)

After the formal pictures in the sanctuary, in a fantastic '55 Bel Air, we headed to.....the high school baseball field right around the corner! I wanted some fun candids of the bridal party there, just the cool juxtaposition of formal wear and dirt. They turned out great!

And then, it was off to the reception, where we arrived a mere hour after starting the pictures in the sanctuary. We were quite proud of that, since we'd been to weddings where it took the bride and groom 1.5-2 hours to arrive! And we got the party started! After introductions, we immediately cut the cake and had our first dances.

I'd like to share more of the details. It may look like we OD'd on baseball stuff, but it was all infused with the other decor and food in a very subtle way.

The reception was an absolute blast! Lots of dancing, laughing, catching up, and eatin good food!

PS...here is a closeup of my bouquet, which showcases my grandmother's brooch. As many of you know, she passed away on Dec 20 of last year. I miss her so much, but she was there...
